Bonsai- forest is your best bet but i would do it in spring :)

For me I like training wolves by just bringing them along with my already trained wolves. If you have no trained wolves then low level forest would be easiest so you fit have to deal with bears etc

bonsai- you can do that but it's not as good as it used to be. Also it is currently winter so there is less prey.
