Alright ^^ GSDs shed a ton to my knowledge, but they definitely fit your other criteria! Poodles also would be a good choice c:
I'd also suggest an Amstaff (American Staffordshire terrier) If you get one from a reputable breeder they have started breeding out a lot of the genetic dog aggression found in other bully breeds. They can, however, have pretty high prey drives as they are terriers. They are super happy-go-lucky dogs, extremely trainable, and just want to do whatever their owners are doing, no matter what it is.
Another breed I'd look into is an Australian Cattle dog, but be aware that they need LOTS of training and depending on the dog, chances are they need an outlet for their working drive or they can be a bit nuts. They tend to do pretty well with large animals when socialized correctly, but they may try to herd them lmao

I don't want to barge in on your conversation, and I'm definitly not as expierienced as Grimm with dogs, but from my expierience English pointers are great. Ginger barely ever shed, was amazing with horses, never got kicked once, loved doing stuff with humans and had energy for days. Sweet and goofy, maybe not exactly the smartest breed, but a great family dog. The only things she hunted were rabbits, birds and lizards. Deer and other larger things she ignored.
